1. Lentil and Potato Soup Recipe
Benefits: Low on fat but high in fiber and protein. This flavorsome vegetarian lentil and potato soup is also high on nutritional value.
Ingredients:
- 2 tbsp olive/vegetable oil
- 3 carrots (chopped)
- 1 onion (diced)
- 4 cloves garlic (minced)
- 3 bay leaves
- 8 cups water
- 1 3/4 cups green lentils (Moong Sabut)
- 2 potatoes (chopped)
- 1 bunch spinach (chopped)
- 1 tsp salt and a pinch of pepper
Directions
In a large pot, cook onions and garlic in oil until turns golden-brown. Now, add carrots and potatoes to the pot and cook till it turns soft. This should take about 10 minutes. Add water or vegetable broth, bay leaves, and lentils. Simmer over medium heat for 30 minutes. Add spinach and cook for another minute or two, just until spinach is wilted. Remove from heat. Pour the soup in a bowl and add salt and pepper to taste.
2. Tomato Soup Recipe
Benefits: You cannot ever go wrong with a healthy tomato soup recipe, and by making your own healthy version at home, you are actually also ensuring that all the important nutrients (remain) are served to your little one.
Ingredients:
- 4 garlic cloves (finely diced)
- 1 cup onion (finely diced)
- 2 tsp olive oil
- 6-8 fresh tomatoes (diced)
- 3 cups water
- Herbs: ½ tsp basil and 1 tsp Thyme leaves
- 2 ½ tsp sugar
- 2 tsp grated Parmesan cheese
- Pepper and sea salt (to taste)
Preparation:
Sauté cloves, onions, tomatoes (in olive oil) for approximately 5-to-7 minutes over medium heat (in a soup pot). Add remaining ingredients (water, herbs, sugar) and heat over medium heat for 15-20 minutes. Use a hand-held blender to remove chunkiness, or use a regular blender. Blend to desired texture. When you pour it in a bowl, grate some cheese on top and sprinkle pepper and sea salt.
Tip: You might want to fry a few bread crumbs to go with this delicious and healthy soup!
